I've got this popping up during the install:

I've removed a previous install after accidentally deleting the built in 'admin' user (please don't ask why -- I screwed up)

It can't find the default user (admin -- which I foolishly removed accidentally on previous install)
I don't understand why completely removing OpenFire and then reinstalling wouldn't remedy this. Maybe I'm not completely uninstalling. Here's what I do to uninstall.
sudo rm -rf /usr/local/openfire
sudo rm -rf /Library/PreferencePanes/Openfire.prefPane
sudo rm -rf /Library/LaunchDaemons/org.jivesoftware.openfire.plist
sudo rm -rf /Library/Receipts/Opnefire.pkg

The answer to my problem was to blow away the db (of course!). By blowing that away and making a new one the new install re-created the admin user with no problems.
